Buying seasonal produce also provides an exciting opportunity to try new foods and to experiment with seasonal recipes. And it simply tastes better!

What's in a name?

Winter squash, gourds, good keepers -- no matter what you call it, squash comes in all shapes and sizes. Most winter squashes are vine-type plants whose fruits are harvested when fully mature. They take three months or more to mature and are best harvested when the weather turns cool. Squash can be stored for months in a cool space -- hence the name "winter" squash.

Winter squash have hard, thick skins. They can be cut in halves or pieces. To cook, first remove fibers and seeds; then bake, steam or boil. When water is used in cooking, use as little as possible to avoid losing flavor and nutrients. Acorn and butternut squash are frequently cut in half, baked and served in the shell. Squash pulp is also used for pies and may be prepared in casseroles, souffles, pancakes and custards. Not sure where to start?
